This time, we'll be introducing Florentine crepes, a dish from Tuscany, Italy. This piping hot dish, similar to a gratin, is perfect for the cold season.

Tuscany: a city of art and culture
Tuscany, located in central Italy, is a region rich in nature and history. Its center, Florence, is known worldwide as the birthplace of the Renaissance and attracts many visitors with its architecture, art, gourmet food, and wine.
Tuscany is a treasure trove of ingredients blessed with the bounty of the sea and mountains, and has a unique food culture. It is famous as a wine producing region, but is also known as a producer of high-quality olive oil.
The Florentine crepes we are introducing this time are a slightly elaborate dish perfect for special occasions. Enjoy them with a glass of wine at the heartwarming dinner table.
Florentine Crepes Recipe
[Material for 2 people]
Crepe batter (for 6 pieces)
1 egg
130ml milk
50g plain flour
Butter 10g
5g sugar
a pinch of salt
Filling
100g spinach (boiled)
100g ricotta cheese (or you can use cottage cheese instead)
1/4 teaspoon salt
100g white sauce (commercially available)
50g tomato sauce (store-bought)
Parmigiano Reggiano (can be substituted with powdered cheese)
[How to make]
1. Put the butter in a heat-resistant container and heat it in the microwave (600W) for 20 seconds to melt it. Add the milk, beaten eggs, and salt to a bowl and mix well. Sift in the flour. Add the melted butter and strain through a sieve. Leave the dough to rest in the refrigerator for about 30 minutes.
2. Heat a frying pan, pour the batter into it with a ladle, tilt the pan to spread it out, and cook the crepe batter over low-medium heat (about 1 minute on each side).
3. Finely chop the spinach and mix with the ricotta cheese and salt.
4. Place 3 on 2 and roll it up.
5. Spread butter (not included in the recipe) on a heat-resistant container and place 4 on top. Pour in white sauce and tomato sauce and spread evenly. Sprinkle on Parmigiano Reggiano.
6. Bake in a preheated oven at 180 degrees for 20 minutes and it's done.
