A chateau that is said to be particularly elegant among Pessac-Leognan
CH. HAUT-BAILLY, located in the village of Pessac Leognan in the Graves region, has been owned by the Sanders family since 1955, and has been rapidly gaining in popularity since 1982. In 1998, Harvard-educated banker Robert G. Wilmer became the owner, renovating the cellar and further improving Haut-Bailly's precision. In recent years, even Parker, who had not previously been very enthusiastic about the wine, has praised it, saying, "In the best vintages, it is exceptionally elegant." Furthermore, in 2009, it received the first 100 points in the history of the chateau from Wine Advocate, and is one of only 16 great classification in the Graves classification. Currently, the chateau is run by his son Chris, who studied ecology at the University of California, Santa Cruz, and general manager Véronique Sanders. The chateau is located at the top of the highest hill in the area, with excellent sunlight and drainage, making it an excellent location. remarkable that 15% of the grape vines are about 100 years old vines. What's more, they are pure French vines that have escaped the damage of phylloxera and have not been grafted onto American rootstocks. In addition, the Italian Massimo Giudacci, known as the master of pruning, was invited as a consultant to grow the grapes, and an old pruning method called Guyot-Poussard was adopted to improve the circulation of sap. The latest technology is also incorporated in vinification, and a prototype sorting machine called "ALIEN" has been introduced. This is an abbreviation for "Automatic Line Intercept Elements Negative", and is a system that photographs the grapes on the stand and sucks up the immature grapes. Thorough sorting improves the quality of the final wine. About 50% of the wine is aged in new barrels, and no filtration is performed at all when bottling.
